Description

Ingredients

  • 2 cups long-grain white rice
  • 4 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat until it shimmers.
  2. Sauté the diced onion for about 3 to 5 minutes, until translucent.
  3. Add the minced garlic and cook for another minute.
  4. Toast the rice, stirring frequently for 2-3 minutes until lightly golden.
  5. Incorporate the broth, cumin, smoked paprika, lime juice, salt, and pepper; mix well.
  6. Simmer on low, covered, for about 20 minutes, until fluffy and liquid is absorbed.
  7. Fluff with a fork and garnish with fresh cilantro before serving.
