- Heat the cream mixture: In a medium saucepan, combine the heavy cream, whole milk, honey, and dried lavender. Warm over medium heat until it becomes hot, but avoid boiling.
- Allow lavender to infuse: Remove the saucepan from heat and let the mixture infuse for 30 minutes.
- Strain the mixture: Use a fine mesh strainer to remove the lavender.
- Whisk the egg yolks: In a separate mixing bowl, vigorously whisk the egg yolks until pale and slightly thickened.
- Temper the yolks: Slowly pour in the warm cream mixture, whisking constantly to temper the yolks.
- Cook until thickened: Return the mixture to the saucepan and cook over low heat while stirring continuously until it thickens slightly, about 5-7 minutes.
- Add flavor enhancers: Remove from heat and stir in the vanilla extract and salt.
- Chill the mixture: Cool down the mixture to room temperature, then cover and refrigerate it for at least 4 hours, preferably overnight.
- Churn in ice cream maker: Pour the chilled mixture into your ice cream maker and churn until it reaches a soft-serve consistency.
- Freeze for texture: Transfer the churned ice cream to a storage container and freeze for a few hours to harden.
