Description

Ingredients

  • 2 large boneless, skinless chicken breasts (or 4 small)
  • 2 tablespoons honey
  • Juice and zest of 2 limes
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 large ripe mango, diced
  • ¼ cup red onion, finely chopped
  • 1 small jalapeño, seeded and minced (optional)
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper, to taste
  • Cooked rice, quinoa, salad greens, or tortillas for serving
  • Lime wedges for serving

Instructions

  1. Marinate the Chicken: In a small bowl, whisk together honey, lime juice, lime zest, olive oil, garlic, cumin, smoked paprika, salt, and pepper until well-blended. Place the chicken in a dish or resealable bag, pour the marinade over, seal it, and refrigerate for at least 30 minutes.
  2. Make the Mango Salsa: In a medium bowl, combine diced mango, red onion, jalapeño, and cilantro. Squeeze lime juice over the mixture, season, and mix well. Let sit for 10-15 minutes.
  3. Cook the Chicken: Preheat your grill to medium-high heat. Grill chicken for 5-6 minutes per side until cooked through, or pan-sear in a skillet for 5-7 minutes per side.
  4. Assemble and Serve: Once cooked, slice the chicken and serve over rice, quinoa, or greens. Top with mango salsa and offer lime wedges.

Notes

You can marinate the chicken for a few hours or overnight for deeper flavor. Customize the salsa with your favorite fruits.
