- 2 tablespoons honey
- Juice and zest of 2 limes

- ¼ teaspoon black pepper
- 1 large ripe mango, diced
- ¼ cup red onion, finely chopped
- 1 small jalapeño, seeded and minced (optional)
- 2 tablespoons fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper, to taste
- Cooked rice, quinoa, salad greens, or tortillas for serving
- Lime wedges for serving
Instructions
- Marinate the Chicken: In a small bowl, whisk together honey, lime juice, lime zest, olive oil, garlic, cumin, smoked paprika, salt, and pepper until well-blended. Place the chicken in a dish or resealable bag, pour the marinade over, seal it, and refrigerate for at least 30 minutes.
- Make the Mango Salsa: In a medium bowl, combine diced mango, red onion, jalapeño, and cilantro. Squeeze lime juice over the mixture, season, and mix well. Let sit for 10-15 minutes.
- Cook the Chicken: Preheat your grill to medium-high heat. Grill chicken for 5-6 minutes per side until cooked through, or pan-sear in a skillet for 5-7 minutes per side.
- Assemble and Serve: Once cooked, slice the chicken and serve over rice, quinoa, or greens. Top with mango salsa and offer lime wedges.
Notes
You can marinate the chicken for a few hours or overnight for deeper flavor. Customize the salsa with your favorite fruits.
