- Begin by preparing the filling: Heat your sauté pan over medium heat and lightly coat it with cooking spray. Add the chopped onion, allowing it to caramelize gently until it achieves a golden hue.
- Toss in the sliced mushrooms and sauté them until they soften, allowing their rich flavor to emerge.
- While the vegetables cook, grab a large mixing bowl and combine the skim ricotta and white cheese until creamy.
- Add the thoroughly drained spinach to the creamed mixture and fold the flavors together gently, seasoning with salt and pepper.
- Now, lay the ham slices on a clean surface. Spoon the mixture onto each slice, being careful not to overfill.
- Carefully roll each slice into a cannelloni, tucking the filling inside.
