  • 1 small onion, chopped
  • ½ cup sliced mushrooms
  • 1 cup pre-cooked, well-drained spinach
  • 250 g skim ricotta
  • 2 tablespoons low-fat white cheese or shredded cheese
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Begin by preparing the filling: Heat your sauté pan over medium heat and lightly coat it with cooking spray. Add the chopped onion, allowing it to caramelize gently until it achieves a golden hue.
  2. Toss in the sliced mushrooms and sauté them until they soften, allowing their rich flavor to emerge.
  3. While the vegetables cook, grab a large mixing bowl and combine the skim ricotta and white cheese until creamy.
  4. Add the thoroughly drained spinach to the creamed mixture and fold the flavors together gently, seasoning with salt and pepper.
  5. Now, lay the ham slices on a clean surface. Spoon the mixture onto each slice, being careful not to overfill.
  6. Carefully roll each slice into a cannelloni, tucking the filling inside.
  7. Lightly grease your baking dish with cooking spray, arranging the rolled cannelloni side by side. Drizzle tomato sauce over the rolls and sprinkle shredded cheese on top.
  8. Bake in a preheated oven at 200°C for 15-20 minutes or until the cheese melts and turns golden.
