Ingredients

- 2 cups cooked pasta (penne, rotini, or fusilli)
- 1 cup cooked chicken, diced
- 1 cup cherry tomatoes, halved
- 1 cup cucumbers, diced
- 1/2 cup red onion, diced
- 1/2 cup black olives, sliced
- 1/2 cup Italian dressing
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Combine the cooked pasta, diced chicken, halved cherry tomatoes, diced cucumbers, red onion, and sliced black olives in a large mixing bowl.
- Pour the Italian dressing over the mixture. Gently toss to coat everything evenly.
- Season with salt and pepper to taste.
- Finish with freshly chopped parsley for garnish.
- Serve immediately, or cover and refrigerate for up to an hour for flavors to meld.
Notes
Make ahead of time, just hold back on the dressing until ready to serve to keep fresh. Can be customized with additional ingredients.
