Description

A vibrant bowl featuring tender marinated chicken, grilled to perfection, paired with a refreshing pineapple salsa for a burst of Caribbean flavors.

Ingredients

Scale
  • 1 lb chicken breast
  • 2 tablespoons jerk seasoning
  • 1 cup cooked brown rice
  • 1 cup diced pineapple
  • 1/2 cup diced red onion
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken: In a mixing bowl, coat the chicken thoroughly with the jerk seasoning. Cover and refrigerate for at least 30 minutes or overnight.
  2. Cook the chicken: Preheat your grill or skillet over medium-high heat. Add the marinated chicken and cook for approximately 6-7 minutes per side until the internal temperature reaches 165°F.
  3. Prepare the salsa: While the chicken cooks, combine the diced pineapple, red onion, chopped cilantro, lime juice, and a sprinkle of salt and pepper in a bowl. Stir gently.
  4. Serve: After resting, slice the chicken into strips, serve over warm brown rice, and top with the pineapple salsa. Enjoy!

Notes

You can substitute chicken breast with thighs or plant-based protein for a vegetarian version. Customize the salsa by adding mango instead of pineapple.
