- 1 tbsp Dijon mustard
- 4 large slices of cheese (such as provolone or mozzarella)

Instructions
- Heat your skillet: Place it over medium heat and lightly spray with olive oil or cooking spray.
- Melt the cheese: Gently lay a slice of cheese in the skillet until it starts to turn golden at the edges.
- Layer your filling: On top of the melted cheese, layer with corned beef, sauerkraut, and a drizzle of Dijon mustard.
- Roll it up: Fold the cheese over the filling to create a snug roll.
- Cook for crunch: Cook until crispy and golden brown on each side, approximately 2–3 minutes.
