Description

Deliciously crunchy Keto Crispy Reuben Roll-Ups that deliver classic Reuben flavors in a low-carb format.


Ingredients

  • 8 oz corned beef, sliced
  • 1 cup sauerkraut, drained
  • 1 cup shredded Swiss cheese
  • 1 tbsp Dijon mustard
  • 4 large slices of cheese (such as provolone or mozzarella)
  • Salt and pepper to taste
  • Olive oil or cooking spray (for frying)

Instructions

  1. Heat your skillet: Place it over medium heat and lightly spray with olive oil or cooking spray.
  2. Melt the cheese: Gently lay a slice of cheese in the skillet until it starts to turn golden at the edges.
  3. Layer your filling: On top of the melted cheese, layer with corned beef, sauerkraut, and a drizzle of Dijon mustard.
