- 2 large zucchinis, sliced
- 1 cup ricotta cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat your oven to 375°F (190°C).
- Combine ricotta cheese with minced garlic, Italian seasoning, salt, and pepper in a mixing bowl.
- Lay half of the zucchini slices in an even layer in your baking dish.
- Spread half of the ricotta mixture over the zucchini.
- Pour half of the marinara sauce on top.
- Repeat the layers with the remaining zucchini, ricotta, and marinara.
- Top with shredded mozzarella and grated Parmesan cheese.
- Drizzle a touch of olive oil over the top.
- Bake for 25-30 minutes until the cheese is bubbly and golden brown.
- Let cool slightly before serving.
Notes
You can prepare the layers a day in advance and store them in the fridge before baking. Customize by adding veggies or changing up the cheese.
