Description

A comforting dish featuring layers of fresh zucchini, creamy ricotta, and zesty marinara topped with melty cheese.


Ingredients

  • 2 large zucchinis, sliced
  • 1 cup ricotta cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine ricotta cheese with minced garlic, Italian seasoning, salt, and pepper in a mixing bowl.
  3. Lay half of the zucchini slices in an even layer in your baking dish.
  4. Spread half of the ricotta mixture over the zucchini.
  5. Pour half of the marinara sauce on top.
  6. Repeat the layers with the remaining zucchini, ricotta, and marinara.
  7. Top with shredded mozzarella and grated Parmesan cheese.
  8. Drizzle a touch of olive oil over the top.
  9. Bake for 25-30 minutes until the cheese is bubbly and golden brown.
  10. Let cool slightly before serving.

Notes

You can prepare the layers a day in advance and store them in the fridge before baking. Customize by adding veggies or changing up the cheese.
