Description

Deliciously light and flaky biscuits infused with fresh blueberries and zesty lemon, perfect for brunch or as a sweet treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 cup blueberries, fresh or frozen
  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Whisk together the flour, baking powder, salt, and sugar in a large bowl.
  3. Mix melted butter with buttermilk, vanilla extract, lemon juice, and lemon zest in another bowl.
  4. Pour the wet ingredients into the dry mixture and stir gently.
  5. Fold in the blueberries with a spatula.
  6. Pour melted butter into a prepared baking dish and scoop portions of the biscuit dough into the dish.
  7. Bake for 15-20 minutes or until golden brown.
  8. Allow to cool slightly before serving.

Notes

For a dairy-free version, substitute buttermilk with plant-based milk. Consider swapping out half the blueberries for chopped strawberries for variety.
