Ingredients

- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1/2 cup unsalted butter, melted
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 cup blueberries, fresh or frozen
- Zest of 1 lemon
- Juice of 1 lemon
Instructions
- Preheat your oven to 425°F (220°C).
- Whisk together the flour, baking powder, salt, and sugar in a large bowl.
- Mix melted butter with buttermilk, vanilla extract, lemon juice, and lemon zest in another bowl.
- Pour the wet ingredients into the dry mixture and stir gently.
- Fold in the blueberries with a spatula.
- Pour melted butter into a prepared baking dish and scoop portions of the biscuit dough into the dish.
- Bake for 15-20 minutes or until golden brown.
- Allow to cool slightly before serving.
Notes
For a dairy-free version, substitute buttermilk with plant-based milk. Consider swapping out half the blueberries for chopped strawberries for variety.
