Description

A refreshing and creamy Lemon Curd Chia Pudding, balancing tangy lemon with the sweetness of maple syrup and the richness of coconut milk.

Ingredients

Scale
  • 1 cup coconut milk
  • 1/4 cup chia seeds
  • 1/4 cup lemon juice
  • 1/4 cup maple syrup (or sweetener of choice)
  • 1/2 teaspoon turmeric

Instructions

  1. Combine ingredients: In your mixing bowl, whisk together 1 cup of coconut milk, 1/4 cup of chia seeds, 1/4 cup of fresh lemon juice, 1/4 cup of maple syrup, and 1/2 teaspoon of turmeric.
  2. Whisk thoroughly: Make sure the chia seeds are well incorporated. Whisk vigorously to break up any clumps that may form.
  3. Rest the mixture: Allow the mixture to sit for about 10 minutes to let the chia seeds absorb the liquid and expand.
  4. Stir again: After 10 minutes, give it another good stir to distribute the seeds evenly.
  5. Chill: Cover the bowl and refrigerate for at least 240 minutes, or overnight.
  6. Serve chilled: Enjoy your pudding topped with whipped coconut cream and zest.

Notes

Make this pudding the night before for best results. Use fresh lemon juice for maximum flavor.
