Description

A vibrant salad featuring shrimp, black beans, corn, and fresh vegetables, tossed in a zesty lime dressing for a refreshing summer dish.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 can black beans, rinsed and drained
  • 1 bell pepper, diced
  • 1 cup corn, fresh or frozen
  • 1/2 red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: Avocado for topping

Instructions

  1. In a large mixing bowl, gently toss together the black beans, diced bell pepper, corn, red onion, and chopped cilantro.
  2. In a small mixing bowl, whisk together the freshly squeezed lime juice, olive oil, salt, and pepper until well combined.
  3. Add the cleaned shrimp to the bowl filled with the vegetable medley.
  4. Pour the lime dressing over everything.
  5. Using a spatula, delicately toss the ingredients until evenly coated with the dressing.
  6. Serve immediately or let the salad chill in the fridge for 30 minutes before serving.

Notes
