Description

Ingredients

  • 1 pound ground turkey
  • 2 medium zucchini, diced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until softened.
  3. Toss in the minced garlic and stir for another minute until fragrant.
  4. Incorporate the ground turkey, breaking it into pieces, and cook until browned, about 6-8 minutes.
  5. Stir in the diced zucchini, diced tomatoes, Italian seasoning, salt, and pepper.
  6. Bring to a simmer and reduce the heat, cooking for 10-15 minutes until zucchini is tender.
  7. If desired, garnish with grated Parmesan cheese just before serving.
