  • 1 ½ cups unsalted butter
  • 1 ½ cups half-and-half
  • 2 teaspoons kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup additional half-and-half
  • 2 tablespoons unsalted butter for reheating

Instructions

  1. Start by placing the diced Russet potatoes into a large stockpot and cover them with water.
  2. Refill the pot with fresh water, ensuring it’s about two inches above the potatoes; cover and bring to a boil.
  3. Once boiling, uncover and let the potatoes cook for 15-20 minutes, stirring occasionally, until fork-tender.
  4. While they cook, create a luxurious butter mixture; combine the unsalted butter, 1 ½ cups of half-and-half, salt, and pepper in a separate saucepan over medium heat.
  5. When the potatoes are ready, drain the cooking liquid using a colander, rinse briefly under cold water, and shake off excess moisture.
  6. Transfer the rinsed potatoes into a large mixing bowl, then pour the melted butter mixture over the top.
  7. Using a potato masher, gently mash until creamy; for finer consistency, consider using a ricer.
  8. Once mashed, spread the potatoes into a 9×13-inch baking dish, cover tightly with foil, and refrigerate for up to three days.
  9. When ready to enjoy, remove the dish from the fridge and let it come to room temperature for about 15-30 minutes while preheating the oven to 350°F.
  10. In a small saucepan, combine the additional ½ cup of half-and-half and 2 tablespoons of butter; gently warm until melted.
  11. Pour this mixture over the potatoes, cover with foil, and bake for 20-25 minutes, or until heated through; gently stir and fluff before serving.

Notes

Customize with garlic, cream cheese, or fresh herbs for added flavor; store leftovers in airtight container for up to 3-5 days.
