Description

A delightful dish combining sweet maple glazed chicken with creamy coconut rice, bringing a taste of tropical paradise to your table.

Ingredients

Scale
  • 2 Chicken breasts or thighs, boneless
  • 1/2 cup Maple Syrup
  • 1/4 cup Soy Sauce
  • 3 cloves Garlic, minced
  • 1 cup Coconut Milk
  • 1 cup Jasmine Rice
  • 1/4 cup Fresh Cilantro, chopped
  • 1 Lime, juiced
  • 2 Green Onions, chopped
  • Chili Flakes (optional)
  • 1 cup Bok Choy, chopped

Instructions

  1. Marinate the Chicken: In a mixing bowl, combine maple syrup, soy sauce, and minced garlic. Immerse your chicken pieces in this mixture. Let it marinate for at least 30 minutes.
  2. Cook the Rice: Prepare jasmine rice using coconut milk instead of water, stirring occasionally.
  3. Sear the Chicken: Heat a skillet over medium heat and sear marinated chicken for 6-7 minutes on each side until golden and cooked through.
  4. Add Heat: Optional—sprinkle chili flakes over the chicken while it cooks for added spice.
  5. Plate It Up: Serve coconut rice as a bed for chicken, drizzling with remaining marinade and garnishing with cilantro and lime juice.
  6. Sauté the Bok Choy: Sauté bok choy with soy sauce until tender.

Notes

Allow chicken to marinate longer for enhanced flavor. Consider air frying or baking for a different texture.
