Description

A luxurious dish featuring tender chicken, sun-dried tomatoes, and fresh spinach, enveloped in a creamy sauce—a perfect centerpiece for romantic dinners.


Ingredients

  • 8 oz pasta (spaghetti or fettuccine)
  • 2 chicken breasts, boneless and skinless
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Cook the Pasta: In a large pot of salted water, boil your pasta until al dente, about 8-10 minutes. Drain and set aside.
  2. Sear the Chicken: Heat a drizzle of olive oil in a large skillet over medium heat. Season the chicken with salt and pepper, then sear for about 6-7 minutes per side until golden and cooked through. Remove and rest.
  3. Sauté Flavors: In the same skillet, add the minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  4. Add Spinach: Toss in fresh spinach, stirring until wilted.
  5. Create the Sauce: Pour in heavy cream, mix in Parmesan and basil. Stir until cheese melts and sauce thickens.
  6. Combine with Chicken and Pasta: Slice the chicken and mix it back into the skillet with the drained pasta.
  7. Serve: Toss to coat evenly, heat through, and garnish with extra Parmesan and basil.

Notes

Consider using half-and-half for a lighter sauce or adding crushed red pepper flakes for a kick.
