- 2 chicken breasts, boneless and skinless
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream

- 2 cloves garlic, minced
- 1 tsp dried basil
- Salt and pepper to taste

Instructions
- Cook the Pasta: In a large pot of salted water, boil your pasta until al dente, about 8-10 minutes. Drain and set aside.
- Sear the Chicken: Heat a drizzle of olive oil in a large skillet over medium heat. Season the chicken with salt and pepper, then sear for about 6-7 minutes per side until golden and cooked through. Remove and rest.
- Sauté Flavors: In the same skillet, add the minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
- Add Spinach: Toss in fresh spinach, stirring until wilted.
- Create the Sauce: Pour in heavy cream, mix in Parmesan and basil. Stir until cheese melts and sauce thickens.
- Combine with Chicken and Pasta: Slice the chicken and mix it back into the skillet with the drained pasta.
- Serve: Toss to coat evenly, heat through, and garnish with extra Parmesan and basil.
Notes
Consider using half-and-half for a lighter sauce or adding crushed red pepper flakes for a kick.
