Description

A flavorful Mediterranean Chicken Zucchini Bake combining tender chicken, vibrant zucchini, and juicy cherry tomatoes topped with gooey cheeses.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 medium zucchinis
  • 1 cup cherry tomatoes
  • ½ red onion
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 2 tablespoons dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with olive oil.
  3. Combine the chicken, zucchini, cherry tomatoes, red onion, and garlic in a mixing bowl.
  4. Drizzle with olive oil and add the seasonings: dried oregano, basil, smoked paprika, salt, black pepper, and red pepper flakes. Mix well.
  5. Spread the mixture evenly in the prepared baking dish.
  6. Top with mozzarella and Parmesan cheese.
  7. Cover the dish with foil and bake for 20 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes until the cheese is golden brown and bubbly.
  9. Garnish with fresh parsley before serving.

Notes

This dish can be prepped a day in advance. Consider using an air fryer for a crispier texture or a slow cooker for convenience.
