- 2 boneless, skinless chicken breasts
- 2 medium zucchinis
- 1 cup cherry tomatoes
- ½ red onion
- 2 cloves garlic
- 2 tablespoons olive oil
- 2 tablespoons dried oregano
- ½ teaspoon dried basil
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- ½ cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 2 tablespoons fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a 9×13-inch baking dish with olive oil.
- Combine the chicken, zucchini, cherry tomatoes, red onion, and garlic in a mixing bowl.
- Drizzle with olive oil and add the seasonings: dried oregano, basil, smoked paprika, salt, black pepper, and red pepper flakes. Mix well.
- Spread the mixture evenly in the prepared baking dish.
- Top with mozzarella and Parmesan cheese.
- Cover the dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is golden brown and bubbly.
- Garnish with fresh parsley before serving.
