Description

A refreshing and vibrant Mediterranean Pasta Salad featuring cherry tomatoes, cucumbers, olives, feta cheese, and a silky balsamic vinaigrette.


Ingredients

  • 1 cup fresh cherry tomatoes, halved
  • 1 cup English cucumbers, diced
  • 1/2 cup black olives (Kalamata or green)
  • 1/2 cup feta cheese, crumbled

  • 1/4 cup extra virgin olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a rolling boil. Add in your pasta, stirring occasionally. Cook until al dente (about 8-10 minutes), drain in a colander, and let it cool slightly.
  2. Combine ingredients: In a mixing bowl, toss the cooled pasta with diced tomatoes, sliced cucumbers, olives, and crumbled feta cheese.
  3. Create the vinaigrette: In a small bowl, whisk together balsamic vinegar, olive oil, salt, and pepper until well combined.
