Description

Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 cup kalamata olives, pitted and sliced
  • 1 cup feta cheese, crumbed
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to the package instructions, ensuring you achieve that perfect al dente consistency. Once cooked, drain and cool the pasta under cold running water.
  2. In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, diced cucumber, red bell pepper, red onion, sliced olives, and crumbled feta cheese.
  3. In a smaller bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour the dressing over the pasta salad, then toss gently to combine everything well.
  5. Garnish with freshly chopped parsley for a pop of color and a hint of freshness.
