Description

Ingredients

  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package instructions until al dente, about 8 to 10 minutes. Drain and rinse under cold water.
  2. Combine ingredients: In a large mixing bowl, gently combine the cooled pasta with halved cherry tomatoes, diced cucumber, finely chopped red onion, Kalamata olives, crumbled feta cheese, and fresh parsley.
  3. Prepare the dressing: In a smaller bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper until blended.
