Ingredients
- Flour or Whole Wheat Tortillas
- Melted Cheese (Mozzarella or Monterey Jack)
- Grilled Bell Peppers (Red, Yellow, or Green)
- Zucchini
- Red Onion
- Sun-Dried Tomatoes
- Garlic
- Oregano
- Yogurt Sauce or Fresh Salsa for Serving
Instructions
- Preheat the grill to medium-high heat.
- Prepare the filling by blending the grilled bell peppers, zucchini, red onion, sun-dried tomatoes, minced garlic, and oregano in a large mixing bowl.
- Assemble the quesadilla by laying a tortilla on the grill, sprinkling melted cheese over half, layering the vegetable mixture on top, and folding the tortilla over.
- Grill the quesadilla for about 3-4 minutes on each side until golden brown and crispy.
- Serve immediately with yogurt sauce or salsa for dipping.
Notes
Make ahead by chopping vegetables and storing in the fridge. You can also use an air fryer or oven if you don’t have a grill.
