Description

A vibrant bowl brimming with grilled chicken, charred corn, cotija cheese, and zesty seasonings that captures the spirit of Mexican street food.

Ingredients

Scale
  • 2 cups grilled chicken, shredded
  • 1 cup charred sweet corn
  • 1/2 cup cotija cheese, crumbled
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 avocado, sliced (optional)
  • 1 can black beans, drained and rinsed (optional)

Instructions

  1. In a large bowl, combine the shredded chicken, charred sweet corn, cotija cheese, lime juice, cilantro, smoked paprika, chili powder, salt, and pepper. Ensure everything mixes well!
  2. Gently fold the ingredients together until they are evenly coated. Be careful not to mash the corn or cheese; the textures should remain distinct.
