Description

A vibrant and flavorful Mexican street food dish featuring grilled corn drenched in a creamy sauce and topped with cotija cheese.


Ingredients

  • 4 Ears of Sweet Corn
  • 1/2 Cup Mayonnaise
  • 1/2 Cup Sour Cream
  • 1 Cup Crumbled Cotija Cheese
  • 2 Tablespoons Lime Juice
  • 1 Teaspoon Chili Powder
  • Salt to Taste
  • Chopped Cilantro for Garnish

Instructions

  1. Preheat your grill to medium-high heat for at least 10 minutes.
  2. Place the ears of corn directly on the grill, cooking for 10-15 minutes and turn occasionally.
  3. Whisk together mayonnaise, sour cream, lime juice, chili powder, and salt in a mixing bowl.
  4. Coat each ear of corn generously with the creamy sauce.
  5. Sprinkle crumbled cotija cheese over the coated corn.
  6. Garnish with chopped cilantro and serve immediately.

Notes

Make the creamy sauce a day in advance for convenience. Optionally serve with lime wedges.
