- 1 pound ground beef or turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 packet taco seasoning
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 bag (32 oz) tater tots
- 1 cup salsa
- Optional toppings: sour cream, avocado, green onions
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the ground meat in a large skillet over medium heat until browned, breaking it apart with a spatula.
- Add the black beans, corn, and taco seasoning to the skillet and stir to combine.
- Layer the meat mixture in a greased 9×13 inch casserole dish, then pour salsa over the top.
- Spread tater tots evenly over the salsa.
- Bake in the preheated oven for 25-30 minutes until golden brown.
- Add shredded cheese on top and bake again for 5-10 minutes until melted.
- Serve with optional toppings such as sour cream, diced avocado, or chopped green onions.
Notes
Assemble the casserole a day before and refrigerate; bake directly from the fridge, adding extra time. For a quicker method, try using an air fryer.
