Description

A comforting and hearty casserole featuring seasoned ground meat, black beans, corn, salsa, and crispy tater tots topped with gooey cheese.


Ingredients

  • 1 pound ground beef or turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 packet taco seasoning
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 bag (32 oz) tater tots
  • 1 cup salsa
  • Optional toppings: sour cream, avocado, green onions

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the ground meat in a large skillet over medium heat until browned, breaking it apart with a spatula.
  3. Add the black beans, corn, and taco seasoning to the skillet and stir to combine.
  4. Layer the meat mixture in a greased 9×13 inch casserole dish, then pour salsa over the top.
  5. Spread tater tots evenly over the salsa.
  6. Bake in the preheated oven for 25-30 minutes until golden brown.
  7. Add shredded cheese on top and bake again for 5-10 minutes until melted.
  8. Serve with optional toppings such as sour cream, diced avocado, or chopped green onions.

Notes

Assemble the casserole a day before and refrigerate; bake directly from the fridge, adding extra time. For a quicker method, try using an air fryer.
