Description

Delightful individual cakes featuring caramelized pineapple on top, perfect for any gathering.


Ingredients

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 can sliced pineapple
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease a 12-cup muffin tin.
  2. Melt the butter in a small saucepan over low heat and stir in the brown sugar until combined.
  3. Pour the mixture into the muffin cups, filling each generously.
  4. Place a slice of pineapple in the center of each muffin cup.
  5. Whisk the granulated sugar and eggs together in a large mixing bowl until fluffy.
  6. Stir in the vanilla extract.
  7. Whisk together the flour, baking powder, and salt in another bowl.
  8. Fold the dry mixture into the egg-sugar blend, alternating with pineapple juice.
  9. Spoon the batter over the pineapple slices, filling each cup 2/3 full.
  10. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  11. Cool in the tin for 5 minutes, then invert onto a plate.

Notes

Serve warm, optionally topped with whipped cream. Each cake is a sweet memory on a plate.
