- 2 cups sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 1 cup chocolate fudge for filling
- Chocolate ganache for topping
Instructions
- Preheat the oven: Set your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
- Mix the dry ingredients: In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk them together until well blended.
- Incorporate the wet ingredients: Add eggs, milk, oil, and vanilla to the dry mix. Using an electric mixer, blend on medium speed for two minutes until everything comes together into a smooth batter.
- Add boiling water: Carefully mix in the boiling water. The batter will be quite thin, but don’t worry; this is what leads to a moist cake!
- Divide and bake: Pour the batter evenly into the prepared pans. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Cool the cakes: Allow the cakes to cool in the pans for about ten minutes before transferring them to a wire rack to cool completely.
- Prepare the fudge layer: Once cool, level the top of one cake layer and hollow out a small space to fill with chocolate fudge.
- Assemble the cake: Stack the second layer on top of the fudge-filled first layer. Then, generously cover the entire cake with chocolate ganache.
- Chill and serve: Refrigerate your cake until the ganache sets. When you’re ready to indulge, slice into this magnificent creation and enjoy every mouthwatering bite.
Notes
For a gluten-free version, substitute all-purpose flour with gluten-free flour. You can also use plant-based milk for a dairy-free option.
