Instructions
- Heat the olive oil in your large pot over medium heat.
- Add the sliced smoked sausage to the pot and brown it for about 5 minutes.
- Toss in the diced onion and minced garlic, sautéing until the onion turns translucent, about 2-3 minutes.
- Pour in the diced tomatoes along with the chicken broth and stir to combine.
- Toss in the pasta, bringing the mixture to a boil.
- Reduce the heat, cover, and let it simmer for 10-12 minutes or until the pasta cooks al dente.
- Stir in the heavy cream and shredded cheese until melted and well combined.
