Description

A warm and inviting loaf cake blending sweet oranges and spicy ginger, perfect for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/2 cup honey
  • 1/2 cup sugar
  • 3 large eggs
  • 1/2 cup fresh orange juice
  • 1/4 cup vegetable oil
  • Zest of 1 orange

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with butter or non-stick spray.
  2. In a bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground ginger until evenly blended.
  3. In another bowl, beat together the honey, sugar, and eggs until smooth and well combined.
  4. Stir in the orange juice, vegetable oil, and orange zest, mixing until everything is well incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack.

Notes

This cake can be made a day before serving to enhance flavor. It can also be baked in an air fryer for a different method.
