Description

Delightful bars made with a crisp almond flour crust and a tangy rhubarb filling, perfect for any occasion.


Ingredients

Scale
  • 2 cups almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 cups chopped rhubarb
  • 1/4 cup honey or maple syrup (for rhubarb)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your 8×8 inch baking dish by lining it with parchment paper.
  2. Combine the almond flour, melted coconut oil, honey or maple syrup, salt, and baking soda in a mixing bowl. Stir until crumbly.
  3. Press this mixture evenly into the bottom of the prepared baking dish.
  4. Mix the chopped rhubarb with the additional honey or maple syrup in a separate bowl.
  5. Spread the rhubarb mixture evenly over the crust.
  6. Bake for 25-30 minutes until the edges are golden and the filling bubbles.
  7. Cool completely before lifting the bars from the pan and cutting them into squares.

Notes

These bars pair well with Greek yogurt, fresh mint, or vanilla ice cream. Store in an airtight container in the fridge for up to a week.
