- 4 cups fresh peaches, diced
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 8 ounces cream cheese, softened
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- Fresh berries for topping
- Cinnamon for sprinkling
Instructions
- Combine the diced peaches, granulated sugar, and lemon juice in a bowl. Toss gently and let macerate for 15 minutes.
- Beat the softened cream cheese with an electric mixer. Add heavy whipping cream, vanilla extract, and powdered sugar, mixing until smooth.
- Combine the graham cracker crumbs and melted butter in another bowl until well mixed.
- Layer the cups starting with the graham cracker mixture at the bottom, pressing down gently.
- Dollop on a layer of the cheesecake filling, smoothing it out.
- Spoon a layer of macerated peaches over the cheesecake, repeating layers until the cups are full.
- Top each cup with fresh berries and a sprinkle of cinnamon.
- Refrigerate for at least 2 hours before serving.
Notes
These cups can be made a day ahead. Be sure to let the cream cheese soften for a smooth filling and refrigerate to set the layers.
