Delicious peach crumb bars with a buttery, crumbly topping and a hint of cinnamon, perfect for summer gatherings.

- 2 cups all-purpose flour
- 1 cup rolled oats
- 1 cup brown sugar
- 1/2 cup cold butter, cubed
- 4 cups fresh or frozen peach slices
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Grease your 9×13 inch baking dish with butter or line it with parchment paper.
- In a large mixing bowl, whisk together the flour, rolled oats, brown sugar, and salt.
- Cut in the cold butter using a pastry cutter or fork until the mixture resembles crumbly sand with some pea-sized butter pieces throughout.
- Press half of the crumb mixture into the bottom of the prepared baking dish, creating a solid crust.
- In another bowl, toss the fresh or frozen peach slices with cinnamon and vanilla extract until well coated. Spread this luscious peach mixture evenly over the crust.
- Take the remaining crumb mixture and sprinkle it overhead, covering the peaches completely.
- Bake for 35-40 minutes or until the top is golden brown and the peaches are bubbling joyfully.
- Allow to cool completely before cutting into bars.
Notes
For a richer flavor, consider adding nuts or a drizzle of icing on top. Store in an airtight container for up to three days or freeze for up to two months.
