Description

Ingredients

  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin generously.
  2. Mix the dry ingredients: In a large bowl, combine the flour, sugar, baking powder, and salt.
  3. Blend the wet ingredients: In a separate bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
  4. Combine the mixtures: Fold the wet ingredients into the dry ingredients until just combined, then fold in the diced peaches.
  5. Prepare the crumble topping: In a smaller bowl, mix the rolled oats, brown sugar, softened butter, and cinnamon until crumbly.
  6. Fill the muffin cups: Spoon the batter into the muffin tin, filling each cup three-quarters full and sprinkle the crumble topping on each muffin.
  7. Bake for 20-25 minutes, until a toothpick comes out clean or with a few crumbs.
  8. Cool for a few minutes before transferring to a wire rack. Serve warm.

Notes
