Instructions
- Preheat your oven to 350°F (175°C). Grease a muffin tin generously.
- Mix the dry ingredients: In a large bowl, combine the flour, sugar, baking powder, and salt.
- Blend the wet ingredients: In a separate bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
- Combine the mixtures: Fold the wet ingredients into the dry ingredients until just combined, then fold in the diced peaches.
- Prepare the crumble topping: In a smaller bowl, mix the rolled oats, brown sugar, softened butter, and cinnamon until crumbly.
- Fill the muffin cups: Spoon the batter into the muffin tin, filling each cup three-quarters full and sprinkle the crumble topping on each muffin.
- Bake for 20-25 minutes, until a toothpick comes out clean or with a few crumbs.
- Cool for a few minutes before transferring to a wire rack. Serve warm.
Notes
Use ripe peaches for optimal sweetness; feel free to use frozen if fresh are unavailable. Allow muffins to cool on a rack to prevent sogginess.
