Description

Ingredients

  • 1 lb tender meat (chicken or beef)
  • 4 cups broth (chicken or beef)
  • 23 spicy peppers (Scotch bonnet or habanero)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh herbs for garnish (like parsley or cilantro)

Instructions

  1. Heat your base. Begin by heating a splash of oil in a large pot over medium heat. When the oil shimmers, add the chopped onion, minced garlic, and grated ginger. Sauté these aromatics until fragrant.
  2. Brown the meat. Introduce the tender meat to the pot, browning it on all sides.
  3. Pour in the broth. Add the broth, allowing it to envelop the browned meat. Let the mixture come to a gentle simmer.
  4. Add the spice. Stir in the spicy peppers, along with thyme, then season with salt and pepper.
  5. Cover and simmer. Put a lid on the pot and allow it to simmer for 30-40 minutes.
  6. Taste and adjust. After simmering, taste the soup and adjust the seasoning as necessary.
  7. Serve with love. Ladle the soup into bowls and garnish with fresh herbs.
