- 8 oz elbow macaroni
- 1 lb ground beef
- 1 cup bell peppers, sliced
- 1 cup onion, sliced
- 2 cups shredded cheese (provolone or mozzarella)
- 2 cups beef broth
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Cook the macaroni in a large pot of salted boiling water until slightly undercooked. Drain and set aside.
- Heat the skillet with olive oil over medium heat.
- Brown the ground beef in the skillet for 5–7 minutes until cooked through.
- Sauté the sliced bell peppers and onions for 3-4 minutes until softened.
- Add the beef broth and simmer for a few minutes.
- Combine the cooked macaroni and shredded cheese, stirring until melted.
- Season with salt and pepper to taste.
- Serve warm in bowls.
