Description

A tropical blend of savory chicken and sweet pineapple served on a bed of fluffy rice, perfect for weeknight dinners or gatherings.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
  3. Cook the seasoned chicken in the skillet for about 5 to 7 minutes per side until golden brown.
  4. Add rice, chicken broth, and soy sauce to the skillet; stir gently to combine.
  5. Place pineapple chunks on top of the mixture.
  6. Bring to a gentle simmer, cover, and reduce the heat to low. Cook for about 20 minutes.
  7. Fluff the rice with a fork and garnish with chopped green onions before serving.

Notes

For a vegetarian alternative, swap the chicken for tofu and use quinoa instead of rice.
