- 1 cup pineapple chunks (fresh or canned)
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 tablespoon soy sauce

- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
- Cook the seasoned chicken in the skillet for about 5 to 7 minutes per side until golden brown.
- Add rice, chicken broth, and soy sauce to the skillet; stir gently to combine.
- Place pineapple chunks on top of the mixture.
- Bring to a gentle simmer, cover, and reduce the heat to low. Cook for about 20 minutes.
- Fluff the rice with a fork and garnish with chopped green onions before serving.
Notes
For a vegetarian alternative, swap the chicken for tofu and use quinoa instead of rice.
