Description

Delightful porcupine meatballs made with ground beef and rice, baked in a rich tomato sauce for a comforting family meal.

Ingredients

Scale
  • 1 cup long-grain rice
  • 1 pound ground beef
  • 1/2 cup onion, chopped
  • 1/4 cup green bell pepper, chopped
  • 1 can (15 ounces) tomato sauce
  • 1 cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the ground beef, rice, chopped onion, green bell pepper, garlic powder, salt, black pepper, and Italian seasoning in a large mixing bowl.
  3. Shape the mixture into small meatballs, roughly 1 inch in diameter.
  4. Prepare the sauce by pouring the tomato sauce and water into a baking dish, stirring to blend.
  5. Nestle the meatballs into the sauce, ensuring each one is well-coated.
  6. Bake for about one hour, until the meatballs are cooked through and the rice is tender.
  7. Serve warm as a main dish or a flavorful side.

Notes

For meal prep, you can prepare the mixture a day in advance and store it in the refrigerator. Consider using lean ground beef or turkey for a healthier option.
