- 8 oz wide Lo Mein noodles
- 1 tablespoon peanut oil
- 1 pound ground pork
- 1/4 cup + 2 tablespoons sliced green onions
- 1/2 cup low-sodium chicken broth
- 3 tablespoons mirin
- 2 tablespoons dark soy sauce
- 1 tablespoon minced garlic
- 2 teaspoons grated ginger
- 1 teaspoon sesame oil
- 1/2 teaspoon sriracha
- 4 cups coleslaw mix
Instructions
- Cook the noodles: Bring a large pot of salted water to a rolling boil. Add the wide Lo Mein noodles and cook according to package instructions until tender yet firm. Drain and rinse under cold water.
- Brown the pork: In a non-stick skillet, warm the peanut oil over medium heat. Add the ground pork and sauté for 5-7 minutes until golden brown. Stir in 1/4 cup of sliced green onions.
- Prepare the sauce: Whisk together chicken broth, mirin, dark soy sauce, garlic, ginger, sesame oil, and sriracha in a mixing bowl.
- Combine noodles and coleslaw: Toss the cooked noodles and coleslaw mix into the skillet with the pork. Pour the sauce over and combine gently using tongs. Cook for an additional 2-3 minutes.
- Garnish and serve: Remove from heat, garnish with remaining green onions, and serve immediately.
Notes
Squeeze fresh lime over the bowl right before serving for extra brightness. Can customize with different proteins or vegetables.
