Description

Delightful Rhubarb Custard Bars with a buttery crust and creamy custard filling, perfect for any occasion.


Ingredients

  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Combine the chopped rhubarb, granulated sugar, 1/4 cup of flour, and salt in a medium bowl. Mix well and set aside.
  3. Cream the softened butter and powdered sugar until light and fluffy in another large mixing bowl.
  4. Gradually mix in 1 cup of flour and the vanilla extract until the mixture resembles coarse crumbs.
  5. Press the crust mixture evenly into the bottom of the greased baking dish.
  6. Beat the eggs in a separate bowl. Add baking powder and milk, and mix until combined.
  7. Pour the egg mixture over the crust layer, spreading it evenly.
  8. Spoon the rhubarb mixture on top of the custard layer without stirring.
  9. Bake for 30-35 minutes until the custard sets and edges turn golden brown.
  10. Cool completely before slicing into squares for serving.

Notes

These bars can be made a day in advance and serve well chilled or at room temperature.
