Ingredients

- 2 cups rhubarb, chopped
- 1 cup granulated sugar
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup butter, softened
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 cup milk
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Combine the chopped rhubarb, granulated sugar, 1/4 cup of flour, and salt in a medium bowl. Mix well and set aside.
- Cream the softened butter and powdered sugar until light and fluffy in another large mixing bowl.
- Gradually mix in 1 cup of flour and the vanilla extract until the mixture resembles coarse crumbs.
- Press the crust mixture evenly into the bottom of the greased baking dish.
- Beat the eggs in a separate bowl. Add baking powder and milk, and mix until combined.
- Pour the egg mixture over the crust layer, spreading it evenly.
- Spoon the rhubarb mixture on top of the custard layer without stirring.
- Bake for 30-35 minutes until the custard sets and edges turn golden brown.
- Cool completely before slicing into squares for serving.
Notes
These bars can be made a day in advance and serve well chilled or at room temperature.
