- Stir in minced garlic and thyme, cooking for another minute until the aroma begins to fill the kitchen.
- Introduce 2 tablespoons of tomato paste, letting it cook for a couple of minutes to deepen its flavor.
- Pour in 4 cups of chicken or seafood stock and bring the mixture to a gentle simmer, letting the flavors meld.
- Use an immersion blender to blend the mixture until smooth.
- Add 1 cup of fresh crab meat and 1 pound of peeled shrimp, cooking for about 5-7 minutes until the shrimp turns pink.
- Gently stir in 1 cup of heavy cream, simmering for a few more minutes.
- Season to taste with salt, pepper, and cayenne for a touch of heat.
- Serve hot, garnished with fresh herbs or a drizzle of olive oil.
Notes
This bisque tastes even better the next day as the flavors develop. Don’t overcook the seafood; it should be just firm and opaque.
