Description

Ingredients

  • 1 cup Fresh crab meat
  • 1 lb Large shrimp, peeled
  • 1 Onion, chopped
  • 1 Celery stalk, chopped
  • 1 Carrot, chopped
  • 3 cloves Garlic, minced
  • 1 tsp Thyme
  • 4 cups Chicken or seafood stock
  • 1 cup Heavy cream
  • 2 tbsp Tomato paste
  • 2 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste
  • Cayenne, to taste (optional)

Instructions

  1. Heat 2 tablespoons of olive oil in a heavy-bottomed pot over medium heat. Add the chopped onion, celery, and carrot, sautéing until softened—around 5-7 minutes.
  2. Stir in minced garlic and thyme, cooking for another minute until the aroma begins to fill the kitchen.
  3. Introduce 2 tablespoons of tomato paste, letting it cook for a couple of minutes to deepen its flavor.
  4. Pour in 4 cups of chicken or seafood stock and bring the mixture to a gentle simmer, letting the flavors meld.
  5. Use an immersion blender to blend the mixture until smooth.
  6. Add 1 cup of fresh crab meat and 1 pound of peeled shrimp, cooking for about 5-7 minutes until the shrimp turns pink.
  7. Gently stir in 1 cup of heavy cream, simmering for a few more minutes.
  8. Season to taste with salt, pepper, and cayenne for a touch of heat.
  9. Serve hot, garnished with fresh herbs or a drizzle of olive oil.

Notes

This bisque tastes even better the next day as the flavors develop. Don’t overcook the seafood; it should be just firm and opaque.
