A delightful homemade ice cream featuring roasted strawberries, zesty lime, and fresh basil, offering a refreshing and creamy dessert experience.

- 2 cups fresh strawberries, hulled and halved
- 2 tablespoons granulated sugar or honey
- 1 teaspoon lime zest
- 2 cups heavy cream
- 1 cup whole milk
- ¾ cup granulated sugar
- 5 large egg yolks
- 1 teaspoon pure vanilla extract
- 1 tablespoon freshly squeezed lime juice
- 1 teaspoon lime zest
- 2 tablespoons fresh basil leaves, finely chopped
- Fresh basil leaves & thinly sliced lime wedges (optional for garnish)
- A drizzle of strawberry syrup or honey (optional for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Place hulled strawberries on a baking sheet lined with parchment paper, sprinkle with sugar and lime zest, and roast for about 20 minutes.
- Cool the roasted strawberries completely and puree them to desired texture.
- Create the custard base by heating heavy cream, whole milk, and half of the sugar in a saucepan. Whisk egg yolks with the remaining sugar until pale, then temper the yolks.
- Thicken the mixture on low heat, stirring until it coats the back of a spoon (about 8-10 minutes).
- Add chopped basil leaves while warm, steep for 15 minutes, then strain through a fine-mesh sieve.
- Combine strawberry puree, lime juice, lime zest, and vanilla extract into the custard. Chill for at least 4 hours or overnight.
- Churn the chilled custard in an ice cream maker for about 20-25 minutes until soft-serve consistency is reached.
- Freeze the churned ice cream in an airtight container for at least 4 hours before serving. Garnish with basil, strawberry syrup, or lime wedges.
Notes
For a dairy-free version, substitute coconut milk and cream. You can also use lemon or orange instead of lime for a different flavor.
