Description

A comforting dish of tender chicken and vibrant vegetables mixed with fluffy rice, all baked to perfection for an easy weeknight dinner.


Ingredients

  • 2 cups cooked rice
  • 2 eggs, beaten
  • 1 cup diced chicken breast
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine in a large bowl the cooked rice, diced chicken, mixed vegetables, and sliced green onions.
  3. Whisk together the soy sauce, sesame oil, salt, and pepper in a separate bowl.
  4. Mix the soy sauce mixture into the rice combination until well-coated.
  5. Spread the mixture onto a large sheet pan evenly.
  6. Add the beaten eggs into little wells made in the mixture.
  7. Bake for about 15 minutes or until the edges are golden brown and eggs are set.
  8. Serve warm and enjoy!

Notes

Cook rice a day ahead for the best texture. Customize proteins and vegetables as desired.
