Description

A vibrant and easy-to-make dish featuring succulent shrimp roasted with colorful bell peppers and onions, topped with fresh lime juice and cilantro.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 bell peppers, sliced (any color)
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon fajita seasoning
  • Salt and pepper to taste
  • Fresh lime juice, for serving
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss together the shrimp, sliced bell peppers, onion, olive oil, fajita seasoning, salt, and pepper in a large mixing bowl until well-coated.
  3. Spread the mixture in a single layer on a sheet pan, ensuring enough space for even cooking.
  4. Bake for 15-20 minutes until the shrimp turn pink and opaque, and the peppers are tender.
  5. Remove from the oven and squeeze fresh lime juice over the top, then garnish with chopped cilantro.

Notes

Keep shrimp coated in seasoning for better flavor and avoid overcooking.
