Description

A comforting one-pan meal featuring tender potatoes, savory ground beef or turkey, and a rich sloppy joe sauce topped with gooey cheese.


Ingredients

  • 1 lb ground beef or turkey
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 cup sloppy joe sauce
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced potatoes into the skillet and cook for about 10-15 minutes, stirring occasionally, until golden and tender.
  3. Brown the ground beef or turkey in a separate pan over medium heat. Add the chopped onion and bell pepper, seasoning with salt and pepper.
  4. Stir in the sloppy joe sauce and let it simmer for a few minutes.
  5. Combine the meat mixture with the cooked potatoes in the skillet.
  6. Top with shredded cheese, cover, and cook until melted.
  7. Serve hot, garnished with chives or parsley if desired.
