Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced potatoes into the skillet and cook for about 10-15 minutes, stirring occasionally, until golden and tender.
- Brown the ground beef or turkey in a separate pan over medium heat. Add the chopped onion and bell pepper, seasoning with salt and pepper.
- Stir in the sloppy joe sauce and let it simmer for a few minutes.
- Combine the meat mixture with the cooked potatoes in the skillet.
- Top with shredded cheese, cover, and cook until melted.
- Serve hot, garnished with chives or parsley if desired.
