- 1 tablespoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup chicken broth
- Juice of 1 lime
- Tortillas or toppings of choice for serving
Instructions
- Blend the spices: In a mixing bowl, combine chili powder, cumin, garlic powder, onion powder, oregano, salt, and black pepper.
- Season the chicken: Rub the spice mixture all over the chicken thighs.
- Prepare the cooker: Place the seasoned chicken into the slow cooker, pour in the chicken broth, and drizzle with fresh lime juice.
- Set it and forget it: Cover the slow cooker and cook on low for 360-480 minutes or high for 180-240 minutes.
- Shred the chicken: Once cooked, use two forks to shred the chicken right inside the slow cooker.
- Serve it up: Warm your tortillas and pile the shredded chicken high with your favorite toppings.
