Description

Tender chicken thighs slow-cooked with smoky spices and fresh lime, perfect for tacos or serving with sides.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth
  • Juice of 1 lime
  • Tortillas or toppings of choice for serving

Instructions

  1. Blend the spices: In a mixing bowl, combine chili powder, cumin, garlic powder, onion powder, oregano, salt, and black pepper.
  2. Season the chicken: Rub the spice mixture all over the chicken thighs.
  3. Prepare the cooker: Place the seasoned chicken into the slow cooker, pour in the chicken broth, and drizzle with fresh lime juice.
  4. Set it and forget it: Cover the slow cooker and cook on low for 360-480 minutes or high for 180-240 minutes.
  5. Shred the chicken: Once cooked, use two forks to shred the chicken right inside the slow cooker.
  6. Serve it up: Warm your tortillas and pile the shredded chicken high with your favorite toppings.
