Description

Ingredients

  • 1 tablespoon vanilla extract
  • 1 1/2 cups old-fashioned whole rolled oats

  • 2 teaspoons cinnamon
  • 3/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • Pinch of salt (optional)
  • 1 heaping cup butterscotch chips

Instructions

  1. Prepare your dough: In the bowl of a stand mixer, combine the egg, softened butter, both sugars, and vanilla extract. Beat until light and fluffy.
  2. Incorporate the dry ingredients: Add the rolled oats, flour, cinnamon, nutmeg, baking soda, and optional salt. Mix until just combined.
  3. Add the butterscotch chips, folding them into the dough.
  4. Shape the cookies: Use a cookie scoop to form dough mounds. Flatten slightly, cover, and refrigerate for at least 2 hours.
  5. Preheat oven to 350°F (175°C) and prepare baking sheets.
  6. Bake for 9 to 10 minutes until edges are set but centers appear glossy.
  7. Cool on the tray for 5 minutes before transferring to a wire rack.
