Instructions
- Prepare your dough: In the bowl of a stand mixer, combine the egg, softened butter, both sugars, and vanilla extract. Beat until light and fluffy.
- Incorporate the dry ingredients: Add the rolled oats, flour, cinnamon, nutmeg, baking soda, and optional salt. Mix until just combined.
- Add the butterscotch chips, folding them into the dough.
- Shape the cookies: Use a cookie scoop to form dough mounds. Flatten slightly, cover, and refrigerate for at least 2 hours.
- Preheat oven to 350°F (175°C) and prepare baking sheets.
- Bake for 9 to 10 minutes until edges are set but centers appear glossy.
- Cool on the tray for 5 minutes before transferring to a wire rack.
