Ingredients

- 2 cups sourdough discard
- 2 cups all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/4 cup warm water
- Coarse salt for sprinkling
- Cheese sauce or mustard for dipping
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Mix the sourdough discard, flour, sugar, and salt in a large bowl.
- Add warm water gradually, mixing until a soft dough forms.
- Knead the dough on a floured surface for 3-5 minutes until smooth and elastic.
- Divide the dough into small pieces and roll into bite-sized shapes.
- Boil water in a pot and add baking soda carefully.
- Place each pretzel bite in boiling water for 30 seconds, then transfer to the baking sheet.
- Sprinkle with coarse salt.
- Bake for 12-15 minutes until golden brown.
- Serve warm with cheese sauce or mustard.
Notes
Make the dough a day ahead and refrigerate. Reheat in the oven for optimal texture.
