Description

This vibrant Spicy Corn Slaw combines sweet corn, crunchy cabbage, and a zesty lime dressing for a refreshing side dish packed with flavor.


Ingredients

  • 1 bag (14 oz) cole slaw mix
  • 2 cups corn (fresh or frozen, thawed)
  • 1/4 cup jalapeño (minced, seeds removed)
  • 1/2 cup cilantro (roughly chopped)
  • 3 green onions (chopped)
  • 1/2 cup mayonnaise (or Greek yogurt)
  • 2 limes (juice of)
  • 2 tablespoons sugar
  • 1 teaspoon garlic powder
  • Salt and pepper (to taste)

Instructions

  1. Toss the cole slaw mix, corn, minced jalapeño, chopped cilantro, and green onions together in a large bowl until well mixed.
  2. Whisk together the mayonnaise, lime juice, sugar, garlic powder, salt, and pepper until smooth and creamy in a separate small bowl.
  3. Pour the dressing over the slaw mixture and gently fold until all ingredients are coated.
  4. Cover the slaw and place it in the refrigerator for at least 30 minutes.

Notes

Tastes even better the next day. Great with grilled meats or as a topping for tacos.
