- 1 bag (14 oz) cole slaw mix
- 2 cups corn (fresh or frozen, thawed)
- 1/4 cup jalapeño (minced, seeds removed)
- 1/2 cup cilantro (roughly chopped)
- 3 green onions (chopped)
- 1/2 cup mayonnaise (or Greek yogurt)
- 2 limes (juice of)
- 2 tablespoons sugar
- 1 teaspoon garlic powder
- Salt and pepper (to taste)
Instructions
- Toss the cole slaw mix, corn, minced jalapeño, chopped cilantro, and green onions together in a large bowl until well mixed.
- Whisk together the mayonnaise, lime juice, sugar, garlic powder, salt, and pepper until smooth and creamy in a separate small bowl.
- Pour the dressing over the slaw mixture and gently fold until all ingredients are coated.
- Cover the slaw and place it in the refrigerator for at least 30 minutes.
