Instructions
- Preheat your oven to 425°F (220°C).
- Cut the watermelon into fry-shaped wedges, about half an inch thick.

- Toss the watermelon fries in the spice mixture until evenly coated.
- Arrange the fries on a rimmed baking sheet lined with parchment paper.
- Bake for 15-20 minutes, flipping halfway through.
- Prepare the dipping sauce by mixing coconut milk, lime juice, and maple syrup until smooth.
- Serve fries hot with dipping sauce on the side, garnished with fresh mint.
