Description

A refreshing snack that blends sweet watermelon with spicy seasoning and a creamy coconut lime dipping sauce.


Ingredients

  • 2 tablespoons chili powder
  • 1 tablespoon olive oil
  • Salt to taste
  • 1/2 cup coconut milk
  • 1 lime (juiced)
  • 1 tablespoon maple syrup
  • Fresh mint for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cut the watermelon into fry-shaped wedges, about half an inch thick.
  3. Combine olive oil, chili powder, and salt in a mixing bowl and whisk until blended.
  4. Toss the watermelon fries in the spice mixture until evenly coated.
  5. Arrange the fries on a rimmed baking sheet lined with parchment paper.
  6. Bake for 15-20 minutes, flipping halfway through.
  7. Prepare the dipping sauce by mixing coconut milk, lime juice, and maple syrup until smooth.
  8. Serve fries hot with dipping sauce on the side, garnished with fresh mint.

Notes

You can customize the spice blend with different spices like cumin or cayenne pepper. Avoid cutting the watermelon too thin to maintain crunch.
