Description

A vibrant bowl filled with sizzling flank steak, colorful bell peppers, and creamy avocado-lime dressing, perfect for any occasion.


Ingredients

  • 1 lb Flank Steak
  • 1 Red Bell Pepper, sliced
  • 1 Green Bell Pepper, sliced
  • 1 Yellow Bell Pepper, sliced
  • 1 Sweet Onion, sliced
  • 2 cups Lettuce (Romaine or Butter), shredded
  • 1 Avocado, pitted and peeled
  • 1 Lime, juiced
  • ¼ cup Fresh Cilantro, chopped
  • 2 tbsp Olive Oil
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • Salt and Pepper, to taste

Instructions

  1. Marinate the flank steak: In a bowl, combine olive oil, cumin, chili powder, salt, and pepper. Pour over the flank steak, ensuring it’s well-coated. Allow it to marinate for a minimum of 15 minutes.
  2. Sear the steak: Preheat your cast-iron skillet over medium-high heat. Once it’s hot, sear the marinated steak for about 4-5 minutes on each side.
  3. Rest and slice: Remove the steak from the skillet and let it rest for a few minutes. Then slice the steak into thin strips against the grain.
  4. Sauté the veggies: In the same skillet, sauté the sliced bell peppers and onions until tender, about 5-7 minutes.
  5. Make the dressing: In a blender, combine avocado, lime juice, salt, and a splash of water. Blend until smooth.
  6. Assemble the bowl: Start with a bed of lettuce in a bowl, layer on the steak strips, followed by sautéed veggies.
  7. Drizzle the avocado-lime dressing over the top, sprinkle with cilantro, and serve immediately.
