Delicious strawberry cheesecake bars with a buttery crust and crunchy streusel topping.

- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 2/3 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
- 1 1/2 cups fresh strawberries, hulled and diced
- 2 tablespoons granulated sugar
- 1 teaspoon fresh lemon juice
- 1 tablespoon cornstarch
- 1/2 cup all-purpose flour
- 1/4 cup packed light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, cold and cubed
Instructions
- Preheat your oven to 350°F.
- Prepare the pan by lining an 8-inch square baking pan with parchment paper.
- Create the crust by combining 1 cup of flour, 1/4 cup of sugar, and 1/4 teaspoon of salt. Stir in the melted butter and press it into the bottom of the pan. Bake for 10 minutes and set aside.
- Make the filling by beating together softened cream cheese and 2/3 cup sugar until smooth. Add the eggs one at a time, mixing thoroughly. Fold in vanilla extract and sour cream.
- Layer the filling over the cooled crust.
- Prepare the strawberries in a small bowl with 2 tablespoons sugar, lemon juice, and cornstarch.
- Spread the strawberry mixture over the cream cheese layer.
- Make the streusel by whisking 1/2 cup flour, brown sugar, cinnamon, and salt, then cutting in the cold butter.
- Sprinkle the streusel over the strawberry layer.
- Bake for 30-35 minutes, until set and golden.
- Cool completely, then refrigerate for at least 3 hours.
- Serve chilled and enjoy!
Notes
These bars can be made a day in advance and keep well in the refrigerator.
