Description

Delicious strawberry cheesecake bars with a buttery crust and crunchy streusel topping.


Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 1/2 cups fresh strawberries, hulled and diced
  • 2 tablespoons granulated sugar
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon cornstarch
  • 1/2 cup all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F.
  2. Prepare the pan by lining an 8-inch square baking pan with parchment paper.
  3. Create the crust by combining 1 cup of flour, 1/4 cup of sugar, and 1/4 teaspoon of salt. Stir in the melted butter and press it into the bottom of the pan. Bake for 10 minutes and set aside.
  4. Make the filling by beating together softened cream cheese and 2/3 cup sugar until smooth. Add the eggs one at a time, mixing thoroughly. Fold in vanilla extract and sour cream.
  5. Layer the filling over the cooled crust.
  6. Prepare the strawberries in a small bowl with 2 tablespoons sugar, lemon juice, and cornstarch.
  7. Spread the strawberry mixture over the cream cheese layer.
  8. Make the streusel by whisking 1/2 cup flour, brown sugar, cinnamon, and salt, then cutting in the cold butter.
  9. Sprinkle the streusel over the strawberry layer.
  10. Bake for 30-35 minutes, until set and golden.
  11. Cool completely, then refrigerate for at least 3 hours.
  12. Serve chilled and enjoy!

Notes

These bars can be made a day in advance and keep well in the refrigerator.
