- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 3/4 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, pureed
- 1/4 cup strawberry jam
Instructions
- Preheat the oven to 350°F (175°C). Grease your 9×9-inch baking dish.
- Combine graham cracker crumbs and melted butter. Press into the bottom of the prepared dish.
- Beat cream cheese and sugar until smooth. Add eggs, mixing one at a time, followed by vanilla extract.
- Pour the cream cheese mixture over the crust. Swirl in pureed strawberries and strawberry jam.
- Bake for 25-30 minutes, until set with a slight jiggle in the center.
- Cool at room temperature, then refrigerate for at least 2 hours before slicing.
Notes
Make ahead for best results. Avoid overmixing after adding eggs. Store in an airtight container for up to 5 days.
